As said, I know a guy who just holds/grips the bat in his hand with no finger on the rubber, I lose to him but I'm sure it's just because he is more skilled then me, is there any tactic I can use which will be effective in beating him?

It is important to see the actual game of that player and analyse his strengths and weaknesses.
The weakness of his gripes that he may have less control of the racket and not have as god a feel for the angle of his bat but it is not something that you can necessarily exploit with tactics.
When playing penhold players it is important to remember to first analyse your opponent as you would if they used any grip. What are their strengths and weaknesses? A common weakness of penhold players is their forehand block especially against a slow spinny topspin. Their backhand may be a weakness if they use the traditional style, or you may wish to explore the crossover point if they are using the reverse penhold backhand.

It's called the "hammer" grip. It isn't used at the top levels because it has little control. So, you could face a lot of wild shots.

I'm sure the difference in control would be very marginal after years of training..
