May I know how to recover from pendulum grip and twiddle in time for the next ball if I do a pendulum serve with my Backhand rubber?

You would quickly grip the racket normally after the Pendulum serve and then do the twiddling action. It is easier to do the twiddle when you have the racket in the palm of your hand. It is not a long process to do either of these things so should be manageable.
The best thing is to practice the movement off the table at first, even sitting in front of the computer. You will quickly get better at the action.
