How do I get better at returning edge shots?

Returning edge shots can indeed be tricky and they often catch players by surprise. Unfortunately, edge shots are often a matter of luck and there's no real reliable technique for returning balls that clip the edge of the table. However, here are a few tips to help you deal with these situations better:
Keep your eyes on the ball at all times and try to stay as focused as possible until the ball has either passed you or you've made contact with it. This can give you a split-second advantage if the ball does take an unexpected direction.
Maintain a balanced and ready position, with your knees slightly bent and your weight on the balls of your feet. This way, you can react as quickly as possible in any direction.
Recognize that when a ball hits the edge, there's a considerable element of luck involved. Don't let it frustrate you or disrupt your mental game. Instead, quickly reset and prepare for the next point.
Once you've mastered the start and finish position of the forehand topspin, you can start to focus on finer details.
