What is the best way to do a forehand serve from the backhand side of the table where you move your bat from side to side at the point of contact and can change the type of sidespin easily I would also like to know if the technique should be any different for a high ball toss.

Hi Thomas,
Sounds like you are talking about the pendulum serve.
Start by standing really side on to the table with your left leg just touching the corner of the table. Then start with your playing elbow up at shoulder height. Use just your forearm to swing through and contact the ball in a brushing action on the side of the ball.

Hi Thomas,
Try to start both serves with the same action. At the last minute you can turn your wrist to either side of the ball. This is difficult but is possible to achieve with lots and lots of practice.
Schlager has a serve where he starts with the wrist in the position for a reverse serve and then turns it to do the regular pendulum serve. Most players do it the other way though. Try both ways to see which is easiest for you.
