It is best to keep the weight off the ankle. What you can do is put your knee on a chair and stand with the good leg. This will keep your weight off the ankle. While you won't be able to move it will still allow you to practice your strokes.
Stay relaxed. This is the number one tip for generating more speed. It is quite a natural reaction to try and tense all your muscles when you are trying to hit the ball as hard as you can but this won't lead to increased power.
