I know that you have to bend you knees at the start of the stroke but what happens during and after the stroke ? Do you straighten your legs ?

You can keep your knees bent throughout the stroke. This will add stability and also keep you balanced to move to the next ball.
When you need to reach that really wide ball the regular shuffle step just won't get you there in time so you need to use the crossover step. This is essentially a running action to get you to the ball as fast as possible.
