If I like the Rook blade, but want to improve the rubber later on, is it easy to change the rubber? I'm thinking that eventually I would like to have more spin on the black rubber, more speed on the red.

The Rook is OK for changing the rubbers on. I have seen it done with good effect.
You may also want to think about the PingSkills Touch blade which is more durable and designed as a Custom blade.
The thickness of a table tennis table is the most important aspect of a table to ensure you get a true consistent bounce. Other things to consider are the net, portability, and storage space.

Be really careful as I actually "messed up my blade when setting the rubber on.
