I noticed that the Chinese always creep over the table in doubles when they are receiving. Why are their standing positions not like in singles to prepare for the long serve?

This is because they only have half the table to cover. Serving long in doubles isn't very common for this reason as it is easy to attack when you know the ball is going to that half.
