Hi. I was just wondering what is the best way to defend when my opponent smashes to my backhand side of the table. Is it hard to learn how to do a backhand chop? I think that would be the best way right?

A Backhand chop is a good response if you are away from the table as it makes it more difficult for your opponent to play a strong next ball.
It isn't a difficult stroke to learn. Take a look at the tutorial on the Backhand Chop.
