My opponent always returns very deep . How to counter them?

One thing you can do is stand a little further back from the table. This doesn't have to be a lot just half a step back will allow you a little more time and the ball that bounces deep will bounce at a better height and position for you.

A common weakness of penhold players is their forehand block especially against a slow spinny topspin. Their backhand may be a weakness if they use the traditional style, or you may wish to explore the crossover point if they are using the reverse penhold backhand.
