Like Alois said, depth is about the distance from the net but to clear up some potential confusion I'd like to add:
Playing a "deep" ball specifically means that you aim for the bounce to happen near the end of the table, as far away from the net as possible. It's important to aim deep when you need more time for the next ball, or when the opponent is staying too close to the table after a short ball.

And to make it harder for them to play at an extreme angle :)
