What I see most offensive players do is that after their serve, they immediately move over to their backhand side to prepare for the forehand smash or forehand loop, but what if the opponent gives ball to their backhand? How do they know when the ball is going to their backhand, and when should you actually move over to the backhand side?

The attacking players that like to play the pivot forehand tend to serve to places where they can expect the return to come there.
It is still a matter of watching the ball after you serve to see where it is coming back to and moving as quickly as you can to cover it with your forehand. That is why the Pendulum serve is popular because it gives you a good position to play forehands on the next ball.
