But how can these skills best be applied in more casual ping pong settings to win against dominant players who have developed their own wacky styles and techniques that are in no way by-the-book?

I think the main thing is that is you develop good technique it can overcome those weird and wonderful techniques. We call it the "Ping Pong Zone"
