I know how to identify a spin but the problem arises because I cannot tell how much spin there is. Can you help?

You have taken the hardest step. Now for the subtle changes. This can also take a bit of time but again it is about experience. You need to see a lot of serves now to be able to get the feel of how much spin there is. With each serve you try to return make sure you watch the result of your attempts. This will give you the best feedback. The watching will record properly what is happening.
If the ball goes a lon way off to the side you know that a bigger adjustment is required next time they serve that same serve with that same amount of spin. The slight variations can be difficult.
Keep working on it now. It can be frustrating at times but that is part of the beauty of Table Tennis.
