What is the best way to remove rubbers from a bat which might be older, but still be in excellent shape?

It is important to be careful when removing rubbers because you don't want to damage the blade.
Start on an edge and work your way around the bat, gently pulling the rubber up. If you find a particularly difficult part, you can also use something like Acetone to soften the glue and help you to take it off.
